ingredients

• 1 pack of OSM Cheese Tortellini 350g
• 2 cups of sliced radicchio
• 1 cup of yellow peppers sliced thin
• 3/4 cup of onions sliced thin
• 1 cup of figs sliced thin (6 – 7 figs)
• 1 cup of basil leaves hand torn into pieces
• 1 cup of walnuts chopped coarsely
• Blue Cheese Vinaigrette

For the vinaigrette

  • 1/3 cup of mayonnaise
  • 2 TBS of plain yogurt
  • 1/2 TBS of red wine vinegar
  • 1/3 cup of blue cheese
  • 1 tsp of salt
  • Fresh black pepper to taste

preparation

  • Put all the vinaigrette ingredients in a bowl and whisk until it is smooth. Reserve
  • Boil the pasta for 5 minutes.
  • Strain and refresh in cold water.
  • Strain again and put in a large bowl
  • Pour the vinaigrette on pasta and mix until the pasta is coated
  • Add the radicchio, peppers, and onions and mix until well mixed
  • Add the figs, basil, and walnuts and mix until everything is well mixed
  • Plate and serve.
